Sustainably sourced fish
For our dishes, we only source fish from sustainable fishing. Our suppliers have to meet the following requirements: No overfishing, preservation of the biodiversity and a management that ensures that regional and international laws are complied.
Our fish supplier, 'Fischmanufaktur Deutsche See', pays particular attention to responsible and sustainable fishing and has already been awarded the German Sustainability Award for their outstanding efforts.
Seasonal and regional vegetables
When it comes to vegetables, we pay particular attention to regional and seasonal cultivation, as well as sustainability and careful treatment of the environment. This way, we can work with vegetables that are high in nutrition and great in taste - all year long.
Beef from the Uckermark
Our beef comes from a breeding program in the Uckermark. The cows have lots of space to graze on open fields and are kept in open and bright stables with lots of freedom of movement. They are fed with natural, non-GMO feed from regional cultivation: grass, cereals, maize and grass silage.
Chicken, raised appropriately
Our chicken comes from twenty selected chicken farmers in North Rhine-Westphalia, who only keep slower growing breeds and feed non-GMO corn and cereals. The animals are raised free of antibiotics, have enough space and a natural day-night rhythm with eight hours of rest.
